1. Muddle the Mint
In a cocktail shaker, add the mint leaves and sugar (if using). Muddle gently to release the mint oils.
2. Add the Rum and Lime Juice
Pour in the aged rum and fresh lime juice into the shaker with the muddled mint. Fill the shaker with ice.
3. Shake
Shake well until the mixture is chilled, about 15 seconds.
4. Strain
Strain the mixture into a chilled champagne flute.
5. Add Bitters and Champagne
Add the dashes of Angostura bitters on top, then slowly pour in the champagne.
6. Garnish and Serve
Garnish with a mint sprig and serve immediately.
