Prepare the Filling
In a mixing bowl, combine the peeled and deveined shrimp, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper. Mix until well combined.

Fill the Dumplings
Place a dumpling wrapper on a clean surface. Spoon about 1 tablespoon of the shrimp mixture into the center of the wrapper. Moisten the edges with water, fold the wrapper over to create a half-moon shape, and press to seal. Repeat until all filling is used.

Cook the Dumplings
Bring a large pot of water to a boil. Carefully add the dumplings and cook for about 5-7 minutes or until they float to the surface and are cooked through. Remove with a slotted spoon.

Make the Dipping Sauce
In a small bowl, mix together soy sauce and a splash of sesame oil. Adjust to taste.

Serve the shrimp dumplings hot with the dipping sauce on the side.
