    Prepare the Roast

    Remove the prime rib from the refrigerator and let it sit at room temperature for about 2 hours before cooking. Preheat your oven to 450°F (232°C).

    Season the Meat

    In a small bowl, mix together the kosher salt, black pepper, minced garlic, and chopped rosemary. Rub this mixture all over the prime rib roast. Drizzle the roast with olive oil and massage it into the meat.

    Roast the Prime Rib

    Place the seasoned prime rib on a roasting rack in a roasting pan. Roast in the preheated oven for 20 minutes. Then reduce the temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours, or until a meat thermometer reads 130°F (54°C) for medium-rare.

    Rest the Meat

    Remove the roast from the oven and transfer it to a cutting board. Tent loosely with aluminum foil and let it rest for at least 20-30 minutes before carving.

    Make the Au Jus

    While the roast is resting, pour off most of the fat from the roasting pan, leaving about 2 tablespoons. Place the pan over medium heat, add the red wine and beef broth, scraping up any browned bits. Simmer until reduced by half.

    Slice the prime rib against the grain and serve with the au jus on the side.
