Place the beef tongue in a large pot and cover it with water. Add the whole onion, garlic cloves, bay leaves, black peppercorns, and salt. Bring to a boil, then reduce the heat to low and simmer for about 2 to 3 hours or until the tongue is tender.

Once cooked, remove the tongue from the pot and let it cool slightly. The skin should peel off easily; discard the skin.
