Cooking Instructions

  1. 1

    Prepare the Tongue

Place the beef tongue in a large pot and cover it with water. Add the whole onion, garlic cloves, bay leaves, black peppercorns, and salt. Bring to a boil, then reduce the heat to low and simmer for about 2 to 3 hours or until the tongue is tender.

  2. 2

    Peel the Tongue

Once cooked, remove the tongue from the pot and let it cool slightly. The skin should peel off easily; discard the skin.

  3. 3

    Slice and Sauté

Slice the tongue into thin pieces. In a skillet, heat the olive oil over medium heat. Add the sliced tongue and sauté for about 5-7 minutes until lightly browned.

  4. 4

    Prepare Garnish

Dice the tomato and chop the cilantro. Squeeze lime juice over the garnished dish.

  5. 5

    Serve

Serve the sautéed lengua with fresh tomato, cilantro, and lime juice on top. Enjoy!
