Burrito Preparation

Prepare the Poblano Cheese Sauce
Roast the Poblano peppers over an open flame or in the oven until charred. Place them in a bowl and cover with plastic wrap to steam for 10 minutes. Peel off the skin, remove the seeds, and chop.

In a saucepan, combine the chopped Poblano peppers, cream cheese, milk, garlic powder, salt, and pepper. Cook over medium heat, stirring until the mixture is smooth and creamy. Adjust seasoning as needed. Set aside.

Assemble the Burritos
Warm the flour tortillas on a skillet or microwave. In the center of each tortilla, layer cooked rice, black beans, choice of meat, and a generous amount of Poblano cheese sauce.

Fold in the sides of the tortilla and then roll tightly from the bottom up. Repeat for the remaining tortillas.

Serve
Place the burritos seam-side down on a plate. Drizzle with additional Poblano cheese sauce if desired and serve hot.
