    Prepare the Marinade

    In a skillet over medium heat, toast the guajillo and ancho chiles for 2-3 minutes until fragrant. Remove from heat and let them cool, then remove the stems and seeds.

    In a blender, combine the toasted chiles, garlic, vinegar, oregano, cumin, salt, black pepper, olive oil, and lime juice. Blend until smooth.

    Marinate the Pork

    Place the pork shoulder in a large zip-top bag or a shallow dish. Pour the marinade over the pork, making sure it is well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.

    Preheat the oven to 300°F (150°C). Remove the pork from the marinade and place it in a roasting pan. Add bay leaves and cover with foil. Roast for about 3 hours, or until the pork is tender and easily shredded.
