Prepare the Puff Pastry
Preheat your oven to 400°F (200°C). Roll out the puff pastry sheets on a floured surface to about 1/8 inch thickness. Cut into desired shapes for your dessert.

Caramelize the Apples
In a large skillet over medium heat, melt the butter. Add the sliced apples and cook for about 5 minutes until they start to soften. Sprinkle the sugar and cinnamon over the apples, stirring occasionally until they are caramelized and golden brown, about 10 more minutes. Remove from heat.

Assemble the Dessert
Place the puff pastry cutouts on a baking sheet lined with parchment paper. Add a spoonful of the caramelized apples on top of each pastry. Bake in the preheated oven for 15-20 minutes or until the pastry is golden and puffed.

Serve
Remove the pastries from the oven and let them cool slightly. Serve warm with a scoop of vanilla bean gelato on top or alongside.
