    Prepare the Rack of Lamb

    Preheat your oven to 400°F (200°C). In a bowl, combine the minced garlic, chopped rosemary, olive oil, salt, and black pepper. Rub this mixture all over the rack of lamb.

    Roast the Lamb

    Place the rack of lamb on a roasting pan. Roast in the preheated oven for about 25-30 minutes for medium-rare, or until it reaches your desired doneness. Use a meat thermometer to check the internal temperature (145°F or 63°C for medium-rare).

    Prepare the Potatoes

    While the lamb is roasting, toss the cubed potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for about 20-25 minutes, or until golden and tender.

    Once the lamb is done, let it rest for 10 minutes before slicing. Serve the sliced lamb alongside the roasted potatoes, garnished with butter and fresh parsley.
