Prepare the Breading
In a shallow dish, mix together the flour, cornmeal, salt, black pepper, and cayenne pepper.

Coat the Ingredients
Dip each catfish fillet, shrimp, crawfish tails, and chicken tenderloins in the egg mixture, then dredge in the breading mixture, ensuring an even coating.

Heat the Oil
In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Catfish
Carefully place the coated catfish fillets in the hot oil and fry for about 4-5 minutes on each side or until golden brown. Remove and drain on paper towels.

Fry the Shrimp
Fry the shrimp for 2-3 minutes until they turn pink and crispy. Remove and drain on paper towels.

Fry the Crawfish
Fry the crawfish tails for about 2-3 minutes until they are crispy. Remove and drain on paper towels.

Fry the Chicken Tenderloins
Fry the chicken tenderloins for about 4-5 minutes until they are golden brown and cooked through. Remove and drain on paper towels.
