1. Prepare the Alligator
In a bowl, soak the alligator strips in buttermilk for at least 1 hour.
2. Prepare the Dredging Mixture
In a separate bowl, combine cornmeal, flour, Cajun seasoning, salt, and black pepper.
3. Heat the Oil
In a deep skillet or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
4. Dredge the Alligator
Remove alligator from buttermilk, letting excess drip off. Dredge the strips in the cornmeal mixture, ensuring they are well-coated.
5. Fry the Alligator
Carefully place the coated alligator strips in the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes or until golden brown and crispy.
6. Prepare the Potato Sticks
While the alligator is frying, soak the potato sticks in cold water for about 30 minutes. Drain and pat dry before frying.
7. Fry the Potatoes
In the same oil, fry the potato sticks until golden and crispy, about 3-4 minutes. Drain on paper towels and season with salt to taste.
8. Serve
Serve the crispy alligator alongside the fresh-cut potato sticks with your favorite Creole dipping sauce.
