    Prepare the Rice

    Cook the white rice according to package instructions and set aside.

    Make the Roux

    In a large pot, melt the butter over medium heat. Gradually whisk in the flour, stirring constantly until the mixture turns a rich brown color, about 15-20 minutes.

    Sauté the Vegetables

    Add the chopped onion, bell pepper, and celery to the roux. Cook for about 5 minutes, or until the vegetables are tender.

    Add Crawfish and Broth

    Stir in the minced garlic, crawfish tails, chicken broth, cajun seasoning, bay leaf, salt, and black pepper. Bring to a simmer.

    Simmer

    Reduce heat and let the mixture simmer for about 30 minutes, stirring occasionally.

    Serve

    Remove the bay leaf, stir in chopped green onions, and serve the etouffee over a bed of white rice.
