Prepare the Breading
In a shallow dish, combine the cornmeal, flour, salt, black pepper, and cayenne pepper.
Prepare the Egg Mixture
In another bowl, whisk the eggs and buttermilk together until well combined.
Coat the Catfish
Dip each catfish fillet first into the egg mixture, allowing excess to drip off, then dredge in the breading mixture until fully coated.
Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot (about 350°F or 175°C).
Fry the Catfish
Carefully place the coated catfish fillets into the hot oil, frying in batches if necessary. Cook for 4-5 minutes on each side, or until golden brown and cooked through.
