Preparation of Veal

    Prepare the Veal

    Pound the veal cutlets to an even thickness of about 1/2 inch using a meat mallet.

    Season the Cutlets

    Season both sides of the veal cutlets with salt and black pepper.

Breading

    Set Up Breading Stations

    In three separate shallow dishes, place the flour, beaten eggs, and a mixture of breadcrumbs and grated Parmesan cheese.

    Bread the Veal

    Dredge each veal cutlet in flour, shaking off excess. Dip into the beaten eggs and then coat with the breadcrumb mixture, pressing to adhere.

Cooking

    Cook the Veal

    In a large skillet, heat olive oil over medium heat. Add the breaded veal cutlets and cook for 4-5 minutes on each side until golden brown and cooked through.

    Prepare the Tomato Sauce

    In the same skillet, add minced garlic and sauté until fragrant, about 30 seconds. Add crushed tomatoes and oregano, simmer for 10-15 minutes.

Assembly

    Layer the Dish

    Preheat the oven to 400°F (200°C). In a baking dish, place the cooked veal cutlets, top each with the tomato sauce, and sprinkle mozzarella cheese on top.
