    Make the Dough

    In a large bowl, combine the all-purpose flour and salt. Create a well in the center, add the eggs and olive oil. Using a fork, beat the eggs and gradually incorporate the flour until the dough forms. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling

    In a mixing bowl, combine the ricotta cheese, Parmesan cheese, cooked spinach, nutmeg, salt, and black pepper. Mix well until all ingredients are fully incorporated. Set aside.

Assembly

    Roll out the Dough

    After resting, divide the dough into four pieces. Roll out one piece at a time on a floured surface until thin (about 1/16th of an inch). Cut into squares (about 3 inches each).

    Fill the Pasta

    Place a teaspoon of filling in the center of each square. Fold the dough over to form a triangle, pressing the edges to seal. Use a fork to crimp the edges.

Sauce

Cooking
