Make the Dough
In a large bowl, combine the all-purpose flour and salt. Create a well in the center and crack the eggs into the well. Add olive oil.

Prepare the Filling
In a medium bowl, combine the ricotta cheese, grated Parmesan cheese, cooked spinach, nutmeg, salt, and black pepper. Mix until well combined and set aside.
Assemble Tortellini

Roll Out Dough
After resting, divide the dough into four pieces. Roll out one piece at a time on a floured surface until very thin (about 1/16 inch). Keep the other pieces covered.

Cut and Fill
Using a round cutter (about 3 inches in diameter), cut circles from the dough. Place a small teaspoon of filling in the center of each circle. Moisten the edges with water, fold in half to create a half-moon shape, and press to seal. Bring the two ends together to form a ring, pinching to seal.

Bring a large pot of salted water to a boil.

Gently drop the tortellini into the boiling water. Cook for about 3-4 minutes until they float to the surface. Remove with a slotted spoon and drain.

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).

Add the halved cherry tomatoes to the skillet and cook for about 5-7 minutes until they start to soften. Stir in the fresh basil, and season with salt and black pepper to taste.

Add the cooked tortellini to the skillet and toss gently to combine with the sauce. Cook for another minute to heat through.
