Prepare the Spinach
Blanch the fresh spinach in boiling water for 1-2 minutes until wilted. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Once cooled, squeeze out excess water and finely chop.

Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center and add the chopped spinach, eggs, and olive oil. Mix with a fork until the dough starts to come together.

Knead the Dough
Transfer the dough onto a floured surface and knead for about 5-10 minutes until smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

Roll Out the Pasta
After resting, divide the dough into four pieces. Roll out each piece using a pasta machine or a rolling pin until thin. Cut into fettuccini strips.

In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant.

Pour in the heavy cream and stir well. Season with black pepper and a pinch of nutmeg. Let it simmer for about 5 minutes.

In a large pot, bring salted water to a boil. Add the fettuccini and cook for 3-4 minutes until al dente. Drain and reserve some pasta water.
