Method
Cook the Pasta
- 1
Boil Water
In a large pot, bring 4-6 quarts of salted water to a rolling boil.
- 2
Cook Pasta
Add 12 oz of spaghetti, mostaccioli, or fettuccini to the boiling water. Cook according to package instructions until al dente, usually about 8-10 minutes.
- 3
Drain Pasta
Once cooked, drain the pasta in a colander and set aside, reserving a cup of the pasta water.
Prepare the Sauce
- 4
Sauté Garlic
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 4 minced garlic cloves and sauté for about 1-2 minutes until fragrant.
- 5
Add Red Pepper Flakes
Stir in 1 teaspoon of crushed red pepper flakes and cook for another 30 seconds.
- 6
Combine Tomatoes
Add the 28 oz can of diced tomatoes (with juice) to the skillet. Stir well to combine.
- 7
Season the Sauce
Add 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 cup of chopped fresh basil. Stir and let the sauce simmer for about 10 minutes, stirring occasionally.
Combine Pasta and Sauce
- 8
Mix Together
Add the drained pasta to the skillet with the sauce. Toss to coat the pasta evenly, adding reserved pasta water a little at a time if the sauce is too thick.
- 9
Serve
Serve the pasta hot, garnished with fresh basil leaves and grated Parmesan cheese to taste.
