Method

Preparation

  1. 1

    Cook the Pasta

Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.

Cooking the Scampi

  1. 2

    Sauté the Shrimp

In a large skillet over medium-high heat, add olive oil and butter. Once the butter is melted and bubbling, add minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant.

  2. 3

    Add the Shrimp

Add the shrimp to the skillet in a single layer. Season with salt and black pepper. Cook for about 2-3 minutes on each side until shrimp are pink and opaque.

  3. 4

    Combine with Sauce

Once the shrimp are cooked, stir in the lemon juice and chopped parsley. If the sauce is too thick, gradually add some reserved pasta water until the desired consistency is reached.

Final Assembly

  1. 5

    Combine Pasta and Sauce

Add the drained spaghetti to the skillet with the shrimp and sauce. Toss everything together to coat the pasta evenly in the sauce.

  2. 6

    Serve

Serve immediately, garnished with additional parsley, if desired.
