In three separate shallow bowls, place the flour in the first, beat the eggs in the second, and mix the breadcrumbs with the grated Parmesan cheese in the third.

Dredge each seasoned filet mignon first in flour, shaking off the excess. Then dip into the beaten eggs, followed by coating them in the breadcrumb and Parmesan mixture. Ensure they are fully coated.
