    Season the filet mignon pieces generously with salt and black pepper on both sides. Let them rest at room temperature for 15 minutes.

    In three separate shallow bowls, place the flour in the first, beat the eggs in the second, and mix the breadcrumbs with the grated Parmesan cheese in the third.

Cooking

    Bread the Filets

    Dredge each seasoned filet mignon first in flour, shaking off the excess. Then dip into the beaten eggs, followed by coating them in the breadcrumb and Parmesan mixture. Ensure they are fully coated.

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the breaded filets and cook for about 3-4 minutes on each side until golden brown. Remove from the skillet and drain on paper towels.
