Prepare the Eggplant
Slice the eggplant into 1/2-inch thick rounds. Sprinkle both sides with salt and let them sit for 30 minutes to draw out excess moisture. Rinse the slices and pat them dry with paper towels.

Fry the Eggplant
In a large skillet, heat 1/4 cup of olive oil over medium heat. Fry the breaded eggplant slices in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

Preheat the oven to 375°F (190°C). In a baking dish, spread a layer of the tomato sauce on the bottom. Place a layer of fried eggplant on top, followed by mozzarella cheese, basil leaves, and more sauce.
