In a skillet, heat the olive oil over medium heat. Add the bacon slices and cook until crispy, about 5-7 minutes. Once cooked, remove and place on a paper towel to drain excess fat.

Prepare the Pulled Pork

In the same skillet, add the pulled pork and heat through, about 3-4 minutes. Set aside.

Scramble the Eggs

In a bowl, whisk the eggs with salt and pepper. In the skillet, pour the egg mixture and scramble over medium-low heat until cooked to your preference, about 3-5 minutes.

Assemble the Dish

On a large plate, layer the scrambled eggs, followed by the pulled pork, crispy bacon, and spinach. Top with both smoked and old cheddar cheese.

Add the Finishing Touches

Drizzle the spicy red sauce over the top and add a generous handful of sprouts. Serve immediately.
