Braised Jackfruit

Prepare the Jackfruit

Drain and rinse the young jackfruit. Shred it using your hands or a fork to create a pulled texture.

Sauté the Aromatics

In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until translucent.

Braised Jackfruit

Add the shredded jackfruit, vegetable broth, soy sauce, smoked paprika, cumin, black pepper, and salt to the skillet. Stir to combine and bring to a simmer. Cover and cook for about 20 minutes, stirring occasionally.

Fried Plantain

Fry the Plantains

In a separate skillet, heat coconut oil over medium heat. Fry the sliced plantains until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

Guava Aioli

Prepare the Aioli

In a bowl, mix together mayonnaise, guava paste, lime juice, garlic powder, and salt until well combined. Adjust seasoning to taste.

Assembly

Assemble the Sandwiches

Toast the challah buns lightly. Layer the braised jackfruit, fried plantains, and a generous dollop of guava aioli on the bottom half of each bun. Top with the other half of the bun and serve.
