Method
Fried Chicken
Marinate the Chicken
In a large bowl, combine the buttermilk, salt, paprika, garlic powder, onion powder, and black pepper. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours or overnight.
Prepare the Coating
In a separate bowl, mix the flour, salt, paprika, garlic powder, onion powder, and black pepper.
Fry the Chicken
Heat the vegetable oil in a large skillet over medium-high heat. Remove chicken from the marinade, letting excess drip off, then dredge in the flour mixture. Fry the chicken pieces in batches until golden brown and cooked through, about 15-20 minutes. Drain on paper towels.
Fried Catfish
Prepare the Fish
Soak the catfish fillets in buttermilk for 30 minutes.
Coat the Catfish
In a bowl, mix the cornmeal, flour, cajun seasoning, salt, and black pepper. Take the soaked catfish fillets and dredge them in the cornmeal mixture.
Fry the Catfish
Heat the vegetable oil in a deep skillet over medium-high heat. Fry the catfish for about 4-5 minutes on each side, until golden brown and cooked through. Drain on paper towels.
Home-Cooked Vegetables
Cook the Green Beans
In a large pot, bring salted water to a boil. Add the green beans and cook for about 5-7 minutes until tender. Drain and set aside.
Combine and Season
Add the cooked green beans to the skillet, season with salt and pepper, and toss to combine. Cook for an additional 2-3 minutes before serving.
