Salad Preparation

Prepare the Salad

In a large bowl, combine romaine lettuce, cherry tomatoes, cucumber, and red onion. Toss well.

Add Dressing

In a separate bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper. Pour over the salad and toss to coat.

Cook the Chicken

Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute. Add chicken breasts and cook until browned and cooked through, about 7-8 minutes per side.

Stir-fry Vegetables

Remove chicken from the skillet and add mixed vegetables. Stir-fry for 5-7 minutes until tender.

Combine and Serve

Slice the chicken and return it to the skillet. Add soy sauce and stir to combine. Serve over cooked rice.

Mix the Batter

In a bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.

In another bowl, combine flour, baking powder, and milk. Gradually add to the creamed mixture until well blended.
