Brewing Process

    Mashing

    In a large pot, heat 4 cups of filtered water to about 160°F (70°C). Add the Pale Malt, Wheat Malt, and Carapils Malt. Maintain a temperature of around 150°F (65°C) for 60 minutes to extract sugars.

    Boiling

    After mashing, bring the mixture to a boil. Add Citra, Mosaic, and Amarillo hops at the beginning of the boil. Boil for 60 minutes.

    Cooling

    After boiling, cool the wort quickly using an immersion chiller or an ice bath until it reaches room temperature.

    Fermentation

    Transfer the cooled wort to a sanitized fermentation vessel. Add the yeast and stir gently. Seal the vessel and let it ferment in a cool, dark place for 1-2 weeks.

    Bottling

    Once fermentation is complete, transfer the beer into sanitized bottles. Add honey to taste if desired, then cap the bottles.

    Carbonation

    Let the bottles condition at room temperature for about 1-2 weeks for carbonation.
