Prepare the Oxtail
In a large pot, combine the oxtail with 4 cups of water. Bring to a boil, then reduce heat and simmer for about 2 hours or until the meat is tender. Skim off any foam that rises to the surface.

Combine Ingredients
Once the oxtail is tender, remove it from the pot and set aside. Strain the broth and reserve it. Add the strained broth to the pan with the curry base. Stir in the coconut milk, tamarind paste, palm sugar, and fish sauce.

Simmer the Curry
Return the oxtail to the pan and let it simmer in the curry sauce for about 30 minutes, allowing the flavors to meld. Adjust seasoning with salt if necessary.

Serve
Serve the Gaeng Hunglay over steamed jasmine rice and garnish with fresh cilantro.
