Preparing the Chicken

Marinate the Chicken
In a bowl, combine curry powder, coconut milk, soy sauce, lime juice, garlic, and ginger. Add chicken strips and marinate for at least 30 minutes.

Skewer the Chicken
Thread the marinated chicken strips onto skewers and set aside.
Making the Peanut Sauce

Combine Ingredients
In a saucepan over medium heat, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, and water. Stir until smooth and heated through. Add red pepper flakes to taste.
Preparing the Cucumber Dressing

Mix the Dressing
In a bowl, mix diced cucumber, rice vinegar, sugar, cilantro, and lime juice. Stir well and set aside.
