Moon Under Hibiscus IPA – Draft: Victoria BC 7% West Coast style India Pale Ale with a well balanced malt base bringing a piney bitterness, with a touch of hibiscus and lavender on the nose.

Brewing Process

    Mash

    Heat 15 liters of water to 68°C (155°F) and add the crushed pale ale malt and caramel malt. Hold the temperature for 60 minutes.

    Sparge

    Sparge with hot water to collect around 24 liters of wort.

    Boil

    Bring the wort to a boil. Once boiling, add 50g of Simcoe hops and boil for 60 minutes.

    Add Hops

    After 15 minutes of boiling, add 50g of Cascade hops. After 45 minutes, add 50g of Centennial hops.

    Add Hibiscus and Lavender

    In the last 5 minutes of the boil, add the dried hibiscus and lavender flowers.

    Cool and Ferment

    Cool the wort to 20°C (68°F) and transfer to a fermenter. Pitch the yeast and seal the fermenter.

    Fermentation

    Allow the beer to ferment for about 2 weeks at room temperature.

    Bottling

    After fermentation, mix in the priming sugar and bottle the beer. Allow to carbonate for another 1-2 weeks.
