Prepare the Pork Mixture
In a large bowl, combine minced pork shoulder, pork fat, garlic, salt, black pepper, Thai chili flakes, and fish sauce. Mix well until all ingredients are evenly incorporated.

Stuff the Sausages
Using sausage casings, stuff the pork mixture into casings, making sure to pack it tightly. Twist sausages into 6-inch links and tie off ends securely.

Fermentation
Place the sausages in a cool, dark place to ferment for 2-3 days. Check daily for any signs of spoilage.

Cook the Sausages
After fermentation, steam the sausages for about 30-40 minutes or until fully cooked. Alternatively, grill them over medium heat until browned and cooked through.

Prepare the Accompaniments
Cook jasmine rice according to package instructions and prepare the vermicelli noodles as per package instructions. Serve with fresh herbs on the side.

Plate the cooked sausages with jasmine rice and vermicelli noodles. Garnish with fresh herbs and serve hot.
