Cooking Instructions
Roasting the Pork Belly
Preheat the oven to 180°C (350°F). Score the skin of the pork belly and rub with salt. Place in a roasting pan and roast for about 1.5 hours or until the skin is crispy and the meat is tender. Let it rest before slicing.
Preparing the Papaya Salad
Julienne the papaya and carrot. In a bowl, mix lime juice, fish sauce, and sugar. Toss the papaya and carrot in the dressing and add chili flakes to taste.
Cooking the Rice Noodles
Soak the rice noodles in hot water for about 15 minutes or until soft. Drain and set aside.
Making the Ground Pork Mixture
In a skillet, sauté minced garlic in a bit of oil until fragrant. Add the ground pork and cook until browned. Season with fish sauce and optional chili flakes.
Preparing the Soft Boiled Eggs
Boil water and gently add the eggs. Cook for 6-7 minutes, then transfer to ice water to stop cooking. Peel and set aside.
Assembling the Noodle Set
In bowls, place a portion of rice noodles, top with ground pork, slices of roast pork belly, papaya salad, and a soft boiled egg. Serve with a side of chicken broth and garnish with fresh cilantro.
