    Prepare the Pork Belly

    In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the pork belly and cook until crispy and golden brown, about 8-10 minutes. Remove from the skillet and chop into bite-sized pieces.

    Scramble the Eggs

    In the same skillet, add another tablespoon of vegetable oil. Crack the eggs into the skillet and scramble until fully cooked. Remove and set aside.

    Sauté Garlic and Scallions

    Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant. Then, add the chopped scallions and cook for another minute.

    Combine Ingredients

    Add the cooked rice to the skillet, followed by the crispy pork belly. Stir well to combine everything. Pour in the prik nahm plaa and season with salt and pepper to taste. Stir-fry for about 5 minutes until everything is heated through.

    Finally, add the scrambled eggs back into the skillet and mix well. Serve hot, garnished with extra scallions if desired.
