Prepare the Rice Noodles
Soak the rice noodles in warm water for about 30 minutes or until they are softened. Drain and set aside.

Cook the Protein
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the chicken or tofu and stir-fry until cooked through, about 5-7 minutes. Remove from the pan and set aside.

Stir-Fry the Vegetables
Add a little more oil if necessary and then add the scallions and bean sprouts to the pan. Stir-fry for 2-3 minutes until just tender.

Combine Ingredients
Add the soaked rice noodles, cooked chicken or tofu, and scrambled eggs back into the pan. Toss everything together gently.

Finish with Peanuts
Sprinkle the crushed peanuts over the top and toss again to combine. Serve hot, garnished with extra peanuts and lime wedges if desired.
