Prepare the Noodles
Soak the flat rice noodles in warm water for about 30 minutes or until softened. Drain and set aside.

Cook the Protein
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add your choice of chicken or tofu and cook until golden brown and cooked through. Remove and set aside.

Stir-Fry the Vegetables
In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and sliced onion. Stir-fry for about 2 minutes until fragrant. Then add bamboo shoots, red bell pepper, and chopped scallions. Stir-fry for another 3-4 minutes.

Combine Everything
Add the soaked noodles back to the skillet along with the cooked protein, chili paste, soy sauce, and fresh basil. Toss everything together and cook for an additional 2-3 minutes until heated through and well combined.

Season and Serve
Season with black pepper to taste. Serve hot and enjoy your Pad Kee Mao!
