Instructions for making KANOM GUI CHAI

Prepare the Chives
Wash the Chinese chives thoroughly and chop them finely. Set aside.

Make the Batter
In a mixing bowl, combine the rice flour, tapioca flour, and salt. Gradually add water, stirring until a smooth batter forms.

Combine Chives with Batter
Fold the chopped Chinese chives into the batter until evenly distributed.

Cook the Cakes
Heat a non-stick frying pan over medium heat and add the vegetable oil. Pour a ladleful of the batter into the pan, spreading it out to form a small cake. Cook for about 3-4 minutes on each side until golden brown. Repeat with the remaining batter.

Prepare the Dipping Sauce
In a small bowl, mix the soy sauce and sugar until dissolved. Adjust the taste by adding sliced Thai chili as desired.
