    Prepare the Noodles

    Soak the flat rice noodles in warm water for about 20 minutes or until softened. Drain and set aside.

    Cook the Chicken

    In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the sliced chicken and stir-fry until cooked through, about 5-7 minutes. Remove from the pan and set aside.

    Scramble the Eggs

    In the same skillet, crack in the eggs and scramble them until just set. Push the eggs to one side of the pan.

    Combine Ingredients

    Add the soaked noodles to the pan along with the cooked chicken, bean sprouts, scallions, and salted radish. Stir-fry everything together for about 3-4 minutes until heated through.

    Serve

    Remove from heat and serve hot on a plate, topped with shredded romaine lettuce.
