Cooking Instructions
- 1
Prepare the Chicken
Season the chicken thighs with salt and pepper. Heat vegetable oil in a frying pan over medium heat, and fry the chicken until golden brown and crispy, about 6-8 minutes on each side. Remove and let drain on paper towels.
- 2
Cook the Rice
In a pot, bring 2 cups of water to a boil. Add the rice, reduce heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and water is absorbed.
- 3
Make the Papaya Salad
In a large bowl, combine shredded green papaya, halved cherry tomatoes, and chopped green beans. In a separate small bowl, mix lime juice, fish sauce, and chili flakes. Pour the dressing over the salad and mix well.
- 4
- 5
Serve the Broth
Heat the chicken broth in a separate pot. Serve hot as a side.
- 6
Plate the Dish
On a plate, serve a portion of jasmine rice, crispy chicken, a helping of papaya salad, and a soft-boiled egg. Serve the hot chicken broth in a bowl on the side.
