Prepare the Grits
In a medium pot, bring water or chicken broth to a boil. Stir in the grits, reduce the heat to low, and cook, stirring occasionally, until thickened (about 20-25 minutes). Stir in 2 tablespoons of butter, salt, and pepper to taste. Keep warm.

Cook the Tasso Ham
In a large skillet over medium heat, melt the remaining 2 tablespoons of butter. Add the diced Tasso ham and cook until browned and crispy, about 5-7 minutes.

Sauté the Shrimp
Add minced garlic, green onions, paprika, and cayenne pepper to the skillet. Cook for 1-2 minutes until fragrant. Then add the shrimp, cooking until they turn pink and opaque, about 3-4 minutes. Season with salt and black pepper to taste, and stir in lemon juice.

Serve
To serve, spoon the creamy grits onto plates and top with the sautéed shrimp and Tasso ham gravy. Garnish with additional green onions if desired.
