Method

Prepare the Whole Red Snapper

Marinate the Fish

Rub the whole red snapper with olive oil, garlic, salt, and pepper. Stuff the cavity with lemon and lime slices, and fresh herbs. Let it marinate for at least 30 minutes.

Grill the Fish

Preheat the grill to medium-high heat. Grill the snapper for about 6-8 minutes on each side or until the flesh is opaque and flakes easily.

Prepare the Garlic Butter Sauce

Make the Sauce

In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant. Stir in lemon juice and parsley. Keep warm.

Prepare the Charleston Red Rice

Cook the Rice

In a large saucepan, cook the bacon until crispy. Remove and set aside. In the bacon fat, sauté onion, garlic, and bell pepper until softened. Add crushed tomatoes, rice, chicken broth, and Cajun seasoning. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes until rice is cooked.

Prepare the Grilled Asparagus

Grill the Asparagus

Toss asparagus with olive oil, salt, and pepper. Grill for about 5-7 minutes until tender and slightly charred.
