Prepare the batter
In a large mixing bowl, combine the pimento cheese, flour, cornmeal, eggs, milk, baking powder, salt, and black pepper. Mix until well combined.

Heat the oil
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

Fry the fritters
Using a spoon or an ice cream scoop, drop spoonfuls of the batter into the hot oil. Fry until golden brown, about 3-4 minutes on each side. Remove with a slotted spoon and drain on paper towels.

Make the Sriracha ranch sauce
In a small bowl, mix together the ranch dressing and Sriracha until well combined. Adjust the Sriracha amount to taste.

Serve
Serve the fried cheese fritters hot with the Sriracha ranch sauce on the side for dipping.
