Prepare the Turkey
Preheat the oven to 325°F (163°C). Remove the giblets from the turkey cavity and pat dry with paper towels. Rub the turkey all over with olive oil, ensuring it's well-coated.

In a small bowl, mix together salt, black pepper, garlic powder, and onion powder. Rub this seasoning mixture all over the turkey, including inside the cavity.

Roast the Turkey
Place the turkey in a roasting pan, breast side up. Roast in the preheated oven for about 3 to 4 hours, or until the internal temperature reaches 165°F (74°C). Baste the turkey with its juices every hour.

Rest the Turkey
Remove the turkey from the oven and let it rest for at least 30 minutes before carving. This allows the juices to redistribute.

Carve the Turkey
Once rested, carve the turkey into slices or pull off the meat to create hand-pulled turkey for the sandwiches.

On a slice of bread, layer pulled turkey, a slice of provolone cheese, lettuce, tomato slices, and onion slices. Spread mayonnaise on the other slice of bread and place it on top.
