    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thick strips, about 1/4 inch wide.

    Soak the Potatoes

    Place the cut potatoes in a large bowl filled with cold water. Soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel or paper towels.

    Heat the Oil

    In a large, heavy pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature.

    Fry the Potatoes

    Carefully add the dried potato strips to the hot oil in batches, ensuring not to overcrowd the pot. Fry for about 5-7 minutes until they are golden brown and crispy.

    Drain and Season

    Remove the fries with a slotted spoon and place them on paper towels to drain excess oil. Season with salt and pepper to taste.
