Prepare the Steak
Slice the ribeye steak into thin strips. Season with salt and black pepper.

Sauté the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and cook for 5 minutes until translucent. Add the sliced mushrooms and cook for an additional 3-4 minutes until softened. If using, add the sliced green and red bell peppers and sauté for another 3 minutes until tender. Remove the vegetables from the skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high and add the seasoned steak strips. Cook for about 5-7 minutes, stirring occasionally, until the steak is cooked to your desired doneness.
