Bacon Bourbon Oysters

Prepare Sweet Potato Mash
Peel and dice the sweet potato into small cubes. Place them in a pot of boiling salted water and cook for about 15 minutes, or until tender.

Cook Bacon
While the sweet potato is boiling, cook the bacon slices in a skillet over medium heat until crispy. Remove bacon from the skillet and drain on paper towels. Reserve the bacon drippings in the skillet.

Make Bourbon Sauce
In the same skillet with the reserved bacon drippings, add the bourbon and maple syrup. Stir and let it simmer for about 5 minutes until slightly thickened.

Mash Sweet Potatoes
Once the sweet potatoes are cooked, drain them and return them to the pot. Add butter, salt, and black pepper to taste. Mash until smooth and creamy.

Assemble Oysters
Spoon a dollop of sweet potato mash onto each oyster. Crumble the cooked bacon and sprinkle it over the top. Drizzle the bourbon sauce over each oyster.

Grill Oysters
Place the tray of oysters on the grill or in the oven and cook for about 5-7 minutes, or until the oysters are hot and slightly bubbly.

Garnish and Serve
Slice the Fresno chili pepper thinly and sprinkle on top of the oysters for a spicy kick. Serve with lemon wedges on the side.
