Striploin Preparation

    Cook the Striploin

    Season the dry-aged striploin with salt and black pepper. Heat a skillet over medium-high heat and add a tablespoon of olive oil. Sear the striploin for 4-5 minutes on each side for medium-rare. Let it rest for 5 minutes before slicing.

Caper Vinaigrette

    Make the Vinaigrette

    In a small bowl, whisk together the capers, lemon juice, Dijon mustard, olive oil, salt, and pepper until well combined. Set aside.

Onion Butter

    Prepare the Onion Butter

    In a pan, melt the butter over medium heat. Add the finely chopped onion and sauté until translucent. Season with salt and black pepper, and mix well. Remove from heat and set aside.

Mashed Potatoes

    Cook the Potatoes

    Boil the cubed potatoes in salted water until tender, about 15 minutes. Drain and return to the pot. Add butter and milk, then mash until smooth. Season with salt to taste.

Plating

    Serve

    Slice the striploin and plate it with a generous scoop of mashed potatoes. Drizzle the caper vinaigrette over the meat and top with the onion butter. Enjoy!
