In a large pot, heat 5 liters of water to around 160°F (70°C). Add the pale malt and caramel malt, stirring well. Maintain the temperature for about 60 minutes.

Mash the Grains

After mashing, remove the grains and bring the liquid to a boil. Once boiling, add the Citra hops and boil for 60 minutes.

Boil the Wort

15 minutes before the end of the boil, add the Cascade hops to the wort.

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Add the yeast and seal the vessel with an airlock. Allow it to ferment for about 1-2 weeks.

Fermentation

Once fermentation is complete, mix the priming sugar with a small amount of water and boil it. Add it to the beer before bottling. Fill sanitized bottles and cap them.

Bottling

Allow the bottles to carbonate for about 1-2 weeks at room temperature.

Carbonation

After carbonation is complete, chill the bottles in the fridge. Pour into a glass and enjoy your homemade Citra Pale Ale!
