Experience the enchanting essence of summer with our 'Magic Hour' Apple Cider from Dominion, Summerland, BC. This refreshing beverage boasts a crisp and vibrant flavor profile, crafted from the finest locally sourced apples. With a delightful 6.5% ABV, it's the perfect companion for those golden evenings, offering a harmonious balance of sweetness and tartness that dances on your palate. Sip and savor the magic of summer in every glass.

Wash, core, and chop the apples into small pieces. Place the chopped apples in a large pot.

Prepare the Apple Base

Add water, cinnamon sticks, cloves, and nutmeg to the pot. Bring to a boil and then reduce to a simmer. Cook for about 30 minutes until the apples are soft.

Cook the Apples

Using a strainer or cheesecloth, strain the mixture to extract the liquid. Squeeze to get as much juice out as possible. Discard the solids.

Extract the Juice

Pour the apple juice back into the pot and add sugar, lemon juice, and yeast. Stir well to combine. Transfer the mixture to a fermentation vessel. Cover with an airlock and let it ferment in a cool, dark place for 1-2 weeks.

Ferment the Cider

If you prefer a sparkling cider, dissolve additional sugar in a small amount of water and add to the fermented cider before bottling. Fill bottles and cap them tightly.

Carbonate the Cider (Optional)

Bottle the cider and store in a cool place for another 1-2 weeks to allow it to carbonate and mature. Chill before serving.
