Brewing Instructions

    Mashing

    In a large brew kettle, heat 3.5 gallons of water to 165°F (74°C). Add the crushed Pilsner, Munich, and Carapils malts to the water, stirring well. Maintain the temperature at 152°F (67°C) for 60 minutes.

    Sparging

    After mashing, sparge with an additional 3 gallons of water heated to 170°F (77°C) to rinse the grains and collect the wort in the kettle.

    Boiling

    Bring the wort to a boil. Once boiling, add the Hallertau hops and boil for 60 minutes. 15 minutes before the end of the boil, add the Saaz hops.

    Cooling

    After boiling, cool the wort quickly to around 65°F (18°C) using an immersion chiller or an ice bath.

    Fermentation

    Transfer the cooled wort to a sanitized fermentation vessel and pitch the Italian lager yeast. Seal with an airlock and ferment at 50-55°F (10-13°C) for 2 weeks.

    Bottling

    After fermentation is complete, dissolve the priming sugar in 2 cups of boiling water and add it to the bottling bucket. Transfer the beer to the bottling bucket, mix gently, then bottle using sanitized bottles and caps.

    Conditioning

    Allow the bottled beer to carbonate at room temperature for 1-2 weeks before transferring to a cooler place for storage.
