Cappelletti Assembly

    Roll out the pasta dough thinly on a floured surface. Cut into 2-inch squares. Place a teaspoon of filling in the center of each square, fold the square over to create a triangle, and seal the edges. Bring the two corners of the triangle together to form a hat shape (cappelletti). Repeat with remaining dough and filling.
