In a large bowl, mix the flour and salt. Make a well in the center and add the eggs and olive oil. Gradually mix the flour into the eggs using a fork until a dough forms. Knead the dough for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Filling

In a skillet, sauté the chopped swiss chard until wilted. In a bowl, combine the shredded braised beef, sautéed swiss chard, grated Parmesan, salt, and pepper. Mix well and set aside.

Assemble the Agnolotti

Roll out the dough into thin sheets. Cut into squares or circles. Place a small spoonful of the filling in the center of each square. Fold over and seal the edges with a fork. Repeat with remaining dough and filling.

Cook the Agnolotti

Bring a large pot of salted water to a boil. Add the agnolotti and cook for about 3-4 minutes until they float to the top. Remove with a slotted spoon and set aside.

In a saucepan, combine beef broth, red wine, minced garlic, rosemary, and thyme. Bring to a boil and then reduce to a simmer for about 15 minutes to reduce and concentrate the flavors.
