1. Prepare the Potatoes
In a large pot, heat 1 tablespoon of olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.
2. Add Tomatoes and Potatoes
Stir in the diced tomatoes and chicken broth. Add the potatoes, salt, and pepper. Bring to a simmer, cover, and cook for about 20 minutes or until potatoes are tender.
3. Grill the Steak
While the potatoes are cooking, preheat a grill or grill pan over high heat. Rub the hanger steak with the remaining olive oil, sprinkle with rosemary, salt, and black pepper. Grill the steak for about 4-5 minutes on each side for medium-rare.
4. Rest and Slice the Steak
Remove the steak from the grill and let it rest for 5 minutes before slicing against the grain.
5. Serve
Plate the tomato-braised potatoes, top with sliced hanger steak, and garnish with fresh parsley.
